Gluten-Free Curry Lime Tacos

Light and easy lunch for summer!

I threw these together for lunch this week and ended up really enjoying them. I had to share!

This recipe only requires a few ingredients and takes about 20-25 minutes!

The Recipe

Prep: 5 minutes

Cook time: 20 minutes

Total: 25 minutes

Servings: about 6 tacos


6 small corn tortillas

1 tablespoon olive oil

Curry tofu mix:

1/2 block of pressed firm tofu

1/3 red onion

1 teaspoon curry powder

2 teaspoons garlic powder

1 tablespoon nutritional yeast

1 teaspoon cumin

Salt and pepper to taste


1 medium-sized avocado

1 lime

1/2 cup of fresh cilantro

Salt and pepper to taste


  1. Press the tofu with a napkin, soaking up any excess water. Repeat as many times as necessary. Once the tofu is pressed, cut into large even cubes.

  2. In a medium-sized pan add the olive oil and bring to a medium-high heat.

  3. Dice onion and add to the pan. Let cook, stirring frequently for about 5 minutes or until translucent.

  4. Add tofu to the pan. Break the cubes up into slightly smaller pieces (they do not have to be even), to where they look like a thick tofu scramble. Add curry powder, garlic powder, nutritional yeast, cumin, salt and pepper. Stir until the tofu is a bright yellow-orange color and cook, stirring frequently, for about 5-10 minutes. Remove from heat.

  5. Stack the corn tortillas on a small napkin or plate and microwave for 45 seconds. Slice avocado into small slices.

  6. Distribute the tofu mix evenly among the tortillas. Top each taco with a pinch of cilantro, avocado slices, salt and pepper, lime juice, and serve!!
